ABSTRACT

This study aimed to evaluate the effectiveness of ultraviolet light in reducing bacterial load of eggshells and the impact of experimental disinfection on hatching, embryo mortality, and time-borne distribution using broiler breeder hens of different ages (38, 42, and 48 weeks old). Fertile eggs were subjected to different exposure periods (5, 7, and 9 minutes) of UV light (UV-C) with a 254 nm wavelength. For controls, eggs disinfected with paraformaldehyde (5.3 g/m3) and eggs not disinfected (NC). After subjection to disinfection protocols, the eggs were placed into sterile plastic bags containing 20 mL of peptone saline solution (0.1% m:v) and massaged for 1 minute to release the bacterial load. Aliquots of this solution were incubated in specific medium for bacterial growth for 48 hours at 37ºC for subsequent CFU counts. To evaluate the effects of disinfection on production, eggs previously disinfected by UV-C (9 min) and paraformaldehyde and NC eggs were candled between incubation days 10 and 13 and at the end of the incubation period to assess embryonic mortality. Hatchability distribution was performed every 8 hours. The 9 minutes 254nm UV-C light exposure was able to disinfect viable eggs and matched the effectiveness of the paraformaldehyde technique.(AU)


Objetivou-se avaliar a eficácia da luz ultravioleta na redução da carga bacteriana de cascas de ovos e o impacto na eclosão e na mortalidade embrionária observando-se a idade das matrizes (38, 42 e 48 semanas). Os ovos foram submetidos a diferentes períodos de exposição (cinco, sete e nove minutos) à luz UV (UV-C) com comprimento de onda de 254nm. Os controles foram ovos desinfetados com paraformaldeído (5,3g/m³) e ovos não desinfetados (NC). Após a desinfecção, os ovos foram colocados em sacos plásticos estéreis contendo 20mL de solução salina peptonada (0,1% m:v) e massageados por um (1) minuto para descolamento das bactérias. Alíquotas dessa solução foram incubadas em meio para crescimento bacteriano por 48 horas a 37ºC e contagem de UFC. Para avaliar os efeitos da desinfecção, ovos previamente desinfetados por UV-C (nove minutos) e ovos com paraformaldeído e NC foram submetidos à ovoscopia entre os dias 10 e 13 de incubação e ao final do período de incubação, para avaliação da mortalidade embrionária. A distribuição da eclodibilidade foi realizada a cada oito horas. A exposição à luz UV-C de 25nm de nove minutos desinfetou os ovos férteis e coincidiu com a eficácia do paraformaldeído.(AU)

ABSTRACT

The aim of this study was to develop a chitosan biofilm against Salmonella enteritidis, for the conservation of fertile and table eggs. Two experiments were performed. Experiment 1: 400 specific pathogen-free table eggs were divided in a completely randomized design into four treatments, five replicates and each replicate with 20 table eggs. Experimental groups were assigned to control and 1, 5 and 10% chitosan treatment. The eggs were immersed in the chitosan solution. They were then exposed to Salmonella enteritidis and stored for 1, 24, 96 and 168h at 4ºC. The eggs were then washed with 10mL of physiological saline solution. Experiment 2: 80 specific pathogen-free fertile eggs were tested, the assays were assigned to control and 1, 5 and 10% chitosan treatment. Each treatment had 20 fertile eggs. The eggs were immersed in the chitosan solution. They were individually weighed and incubated. Egg weight, humidity loss, and hatchability (weight and length of newly hatched chicks) characteristics were assessed. In Experiment 1, comparison between treatments showed differences (P< 0.05) in the total recovered of Salmonella enteritidis on eggshell, with the lower values in 5 y 10% chitosan treatment at 96 y 168h respectively. In Experiment 2, chitosan did not show any effect on the egg weight and chick weight, where the average was 57.44 and 38.23g respectively. The humidity loss and chick length showed differences (P< 0.05), with the lower values in 5 y 10% chitosan treatment. The antibacterial activity of chitosan biofilm provide a practical tool against Salmonella enteritidis in fertile and table eggs because the chitosan did not affect egg weight and chick weight, relevant parameters in the poultry industry.(AU)


O presente estudo teve como objetivo desenvolver um biofilme de quitosana contra Salmonella enteritidis, para conservação de ovos férteis e de mesa. Dois experimentos foram realizados. Experimento 1: 400 ovos de mesa livres de patógenos especificados foram divididos em delineamento inteiramente casualizado em quatro tratamentos, cinco repetições e cada réplica contendo 20 ovos de mesa. Grupos experimentais foram designados para controle e 1, 5 e 10% de tratamento com quitosana. Os ovos foram imersos em solução de quitosana. Em seguida foram expostos a Salmonella enteritidis, e armazenados por 1, 24, 96 e 168h a 4ºC. Após, os ovos foram lavados com 10mL de solução salina fisiológica. Experimento 2: 80 ovos férteis livres de patógenos especificados foram testados. Os ensaios foram atribuídos a controle e 1, 5 e 10% de tratamento com quitosana. Cada tratamento teve 20 ovos férteis. Os ovos foram imersos em solução de quitosana. Em seguida foram individualmente pesados e incubados. Peso dos ovos, perda de umidade e características de eclodibilidade (peso e comprimento dos pintinhos recém-nascidos) foram avaliados. No Experimento 1, a comparação entre tratamentos mostrou diferenças (P< 0,05) na quantidade total recuperada de Salmonella enteritidis na casca, com os menores valores em 5 e 10% de tratamento com quitosana a 96 e 168h respetivamente. No experimento 2, a quitosana não mostrou nenhum efeito no peso do ovo e no peso do pintinho, onde a média foi de 57,44 e 38,23g respetivamente. A perda de umidade e comprimento do pintinho apresentaram diferenças (P< 0,05), com os menores valores em 5 e 10% de tratamento com quitosana. A atividade antibacteriana do biofilme de quitosana, fornece uma ferramenta prática contra Salmonella enteritidis em ovos férteis e de mesa, pois a quitosana não afetou o peso do ovo e peso do pintinho, parâmetros relevantes na indústria avícola.(AU)

ABSTRACT

O experimento foi realizado no setor de avicultura/UFRRJ, utilizando 348 galinhas semipesadas (linhagem Dekalb Brown), com 52 semanas de idade, criadas sob dois sistemas de produção: cage-free e em gaiolas. Os dados obtidos pela análise físico-química e microbiológica dos ovos e a resistência óssea à quebra foram submetidos à análise de variância. No caso de ocorrerem efeitos dos diferentes sistemas de produção, foi aplicado o teste de Tukey a 5% de probabilidade para comparação das médias. A qualidade físico-química foi igualmente favorecida pelos dois sistemas de produção, indicando que as circunstâncias experimentais propiciaram condições adequadas para a formação de ovos de boa qualidade. O sistema de gaiola não desfavoreceu as características ósseas das galinhas, apontando que, em densidades adequadas, a gaiola pode não exercer um fator prejudicial para a qualidade óssea. O sistema de produção cage-free piorou a contaminação da casca, comprovando que ovos postos em ninhos são mais contaminados em comparação aos produzidos em gaiolas.(AU)


The experiment was carried out in the poultry sector / UFRRJ, using 348 semi-heavy hens (Dekalb Brown line), 52 weeks old, raised under two cage-free production systems and cages. The data obtained by the physical-chemical and microbiological analysis of the eggs and the bone resistance to the break were submitted to analysis of variance, in case of effects of the different production systems, the Tukey's test was applied at 5% of probability for comparison of the means. The physical-chemical quality was also favored by the two production systems, indicating that the experimental circumstances provided adequate conditions for the formation of good quality eggs. The cage system did not disfavor the bony characteristics of the hens, indicating that at suitable densities, the cage may not exert a detrimental factor to bone quality. The cage-free production system worsened shell contamination by proving that nesting eggs are more contaminated compared to those produced in cages.(AU)

ABSTRACT

O trabalho objetivou identificar possíveis contaminações microbiológicas no setor produtivo de avicultura de postura agroecológica do Colégio Técnico da Universidade Rural – CTUR. As análises microbiológicas comprovaram a presença do fungo do gênero Cladosporium spp. os quais são altamente eficientes em produzir contaminações em ovos, sendo um potencial risco à saúde dos consumidores. Porém quando as amostras foram analisadas isoladamente de penas e ovos foi observado, mais uma vez, que havia crescimento de Cladosporium spp no isolado das penas das aves, mas não havia nenhum crescimento em nenhuma das amostras de ovos coletadas. Ou seja, não foi possível observar a infecção de forma vertical, que seria a ave transmitindo o fungo para o ovo durante a sua formação. Portanto, o setor produz ovos agroecológicos em nível seguro para o consumo.

ABSTRACT

Este trabalho objetivou avaliar a qualidade microbiológica de ovos caipiras comercializados na feira livre de São Joaquim na cidade de Salvador – BA. Foram realizadas análises para verificar a presença de Salmonella spp. e, também, a ocorrência e quantificação de bactérias do grupo Coliformes totais, Escherichia coli e Staphylococcus spp. em oito amostras, totalizando 96 ovos, analisados separadamente em casca e conteúdo. A presença de Salmonella spp. não foi verificada na casca de nenhuma das amostras, no entanto em 50% das cascas de ovos analisadas foi verificada a ocorrência de Coliformes totais com contagens entre <10(2) e incontáveis colônias UFC/g, a ocorrência de Escherichia coli foi confirmada em 12,5% das cascas com contagens de <10(2) a 3,0 x 103 UFC/g, já Staphylococcus spp ocorreram na casca de 75% amostras analisadas variando entre <10(2) e incontáveis colônias UFC/g. Não foi verificada a ocorrência dos microrganismos pesquisados no conteúdo dos ovos analisados. Estes resultados indicam a necessidade de melhoria nas práticas de manipulação que visem à redução da incidência desses microrganismos nas cascas dos ovos.

ABSTRACT

Considerando a necessidade de se desenvolver estratégias para a incubação de ovos sujos e a demanda de se utilizar métodos renováveis de sanitização, a utilização da luz ultravioleta para desinfecção de ovos incubáveis sujos foi o objetivo desta pesquisa. Foram avaliados ovos sem desinfecção (C-), desinfetados com paraformaldeído (C+), e expostos a tempos diferentes de exposição ultravioleta: UV 3’30”, UV 4’30” e UV 5’30”. Os ovos C(+) e os expostos à UV por 3’30” e 5’30” tiveram uma redução significativa na quantidade de colônias na casca dos ovos em relação ao C(-), variando de 0.64 a 1 logUFC/g. Os tratamentos C(+), UV 3’30” e UV 5’30” foram aplicados para avaliação da incubabilidade dos ovos. A eclodibilidade do tratamento UV 3’30” (70,51%) foi superior ao UV 5’30” (51,16%) e similar ao C(+) (55,81%). Conclui-se que o tratamento UV 3’30” é eficaz na redução da contaminação microbiológica de ovos sujos e não afeta negativamente a eclodibilidade e a viabilidade dos pintinhos nascidos.


Considering the need to develop strategies for dirty eggs incubation and the demand to use renewable methods of sanitation, the use of ultraviolet light for disinfecting hatching dirty eggs was the objective of this research. Eggs not disinfected (C-), disinfected with paraformaldehyde (C+) and exposed to different times of UV radiation (UV 3’30”, UV 4’30” and UV 5’30”) were tested. The eggs C(+) and those exposed to UV for 3’30” and 5’30” presented a significant reduction on the number of colonies of eggshells comparing to C(-), with a 0.64 to 1 logUFC/g variation. The treatments C(+), UV 3’30” and UV 5’30” were applied in an incubation phase. The hatchability of treatment UV 3’30” (70,51%) was superior to UV 5’30” (51,16%) and alike C(+) (55,81%). In conclusion, the treatment UV 3’30” is effective in reducing microbiologic contamination of dirty eggs and do not affect negatively hatchability and quality of chicks.

ABSTRACT

Egg contamination with microbial pathogens is an enduring worldwide concern. Natural products are frequently recommended as ideal alternatives to substitute synthetic and chemical antimicrobials. Oak galls (Quercus infectoria) are aberrant growths on oak trees that have many medicinal and pharmaceutical applications. Q. infectoria extract (QIE) antimicrobial action was assessed against many microbial species, and used for eggshell decontamination. QIE antimicrobial activity was evidenced against Staphylococcus aureus, Escherichia coli, Pseudomonas aeruginosa, Salmonella Typhimurium and Candida albicans, using different assay methods. Disinfection of eggshell microbial contamination, by immersion in 1% QIE solution, sharply reduced total colony count, yeasts and molds, Enterobacteriaceae. E. coli and S. aureus were completely inhibited after 60min of immersion in QIE. QIE biochemical analysis revealed elevated contents of phenolic and flavonoid compounds. The captured micrographs of S. aureus cells treated with QIE showed strong alterations in cell morphology; cells were entirely lysed and ruptured after 6h of treatment. QIE can be recommended as an effective and natural disinfectant for decontaminating eggshells from pathogenic microorganisms.


La contaminación de huevos con patógenos microbianos es un problema constante en todo el mundo. Con frecuencia se recomiendan diversos productos naturales como alternativas ideales para sustituir a los antimicrobianos sintéticos. Las agallas de roble (Quercus infectoria) son de crecimiento aberrante en los robles y tienen muchas aplicaciones medicinales y farmacéuticas. Se evaluó la acción antimicrobiana del extracto de Quercus infectoria (QIE) contra varias especies microbianas y también este se aplicó para la descontaminación de cáscaras de huevo. La actividad antimicrobiana del extracto de QIE se evidenció en relación con Staphylococcus aureus, Escherichia coli, Pseudomonas aeruginosa, Salmonella typhimurium y Candida albicans, utilizando diferentes métodos de ensayo. La inmersión de las cáscaras de huevo en extracto de QIE al 1% logró una fuerte reducción del recuento total de colonias, de levaduras y de mohos, y de miembros de Enterobacteriaceae. La inmersión durante 60 min inhibió completamente el desarrollo de E. coli y S. aureus. El análisis bioquímico del extracto de QIE reveló que este tiene un contenido elevado de compuestos fenólicos y de flavonoides. Se documentó mediante micrografías la presencia de grandes alteraciones en la morfología celular de S. aureus tras la exposición al extracto de QIE: las células se lisaron completamente y se rompieron después de 6h de tratamiento. El extracto de QIE se puede recomendar como un desinfectante eficaz y natural para descontaminar cáscaras de huevos de microorganismos patógenos.

ABSTRACT

A cadeia produtiva do Caiman yacare tem-se destacado no Mato Grosso com a exportação de 143.386 peles em 2015, cujo sistema de manejo (ranching) implica a incubação artificial dos ovos. Nesse processo, a contaminação bacteriana de ovos influencia a taxa de eclosão. O conhecimento da microbiota de ovos incubados naturalmente orienta o manejo sanitário adequado no incubatório. No presente estudo, são apresentadas informações sobre essa microbiota e sua correlação com a de outros crocodilianos, apontando-se as espécies com potencial patogênico. Amostras de 20 ninhos de C. yacare foram coletadas e semeadas em ágar sangue e ágar Mac Conckey. A colônia condizente com Salmonella sp. foi confirmada pela técnica de reação em cadeia de polimerase. Das 22 espécies bacterianas isoladas, 59% pertencem à família Enterobacteriaceae e 41% a outros táxons bacterianos. A semelhança dos achados com as bactérias isoladas na microbiota oral e/ou intestinal/cloacal de crocodilianos foi de 77,27%. As bactérias mais e menos frequentes foram, respectivamente, Bacillus cereus, Flavobacterium multivorum, Citrobacter freundii, Escherichia hermannii, Hafnia alvei, Morganella, morganni, Salmonella sp., Serratia marcescens e Shigella sonnei. Das bactérias isoladas, 86,36% têm potencial patogênico para crocodilianos. A origem materna e a ambiental da microbiota de ovos incubados naturalmente são, respectivamente, de 77,27% e 27,27%.(AU)


The Pantanal caiman productive chain has grown in Mato Grosso with the exportation of 143.383 leather pieces in 2015, whose management system (ranching) implies the artificial incubation of eggs. In this process, the bacterial contamination of the eggs influences the hatching rate. Knowledge of the naturally incubated microbiota of eggs guides the appropriate sanitary management in the incubator room. Here we present information about this microbiota and correlate it with that of other crocodilians, indicating the species with pathogenic potential. Samples were collected in 20 nests at Pantanal, and sown in blood and Mac Conckey agar. Salmonella sp. was confirmed through polymerase chain reaction technique. From the twenty-two different species of bacteria isolated, 59% are from the Enterobacteriaceae Family and 41% from other bacterial taxonomies. The similarity of findings to isolated bacteria in the crocodilians oral and/or intestinal/cloacal microbiota was of 77,27%. The most and least frequent bacteria were, respectively, Bacillus cereus, Flavobacterium multivorum and Citrobacter freundii and Escherichia hermannii, Hafnia alvei, Morganella, morganni, Salmonella sp., Serratia marcescens and Shigella sonnei. Among the isolated bacteria, 86,36% are pathogenic for crocodilians. The maternal and environmental origin of the microbiota of eggs naturally incubated is, respectively, of 77,27% and 27,27%.(AU)

ABSTRACT

The quality of products derived from eggs depends on the quality of the raw material source and the industrial production. The contamination by fungi and bacteria can occur after exposure of the product in the retail market. The objective of this study was to evaluate the microbiological quality of 60 samples of derivated egg products and evaluate the effects of gamma radiation of cobalt-60, using the dose of 5 and 10 kGy, for decontamination of products collected in the retail market in the São Paulo city. The bacterial count was performed by the most probable number (MPN) and the fungal counts by serial dilution after plating surface. It was observed a decrease in the humidity and water activity (Aw) values of irradiated whole egg powder and white egg powder samples (p<0.05), but there was no significant change in the pH of the same samples irradiated with 5 and 10 kGy (p>0.05). In the powdered yolk the values of pH and Aw presented a significant difference (p<0.05), but no significant difference in the humidity values of 5 and 10 kGy irradiated samples (p>0.05). Effective microbial sterilization of all products occurred at the dose of 10 kGy.(AU)


A qualidade dos produtos derivados de ovos depende da qualidade da matéria-prima e da produção industrial. A contaminação por fungos e bactérias pode ocorrer após a exposição do produto no mercado varejista. O objetivo deste estudo foi avaliar a qualidade microbiológica de 60 amostras de derivados de ovos e avaliar os efeitos da radiação gama de cobalto-60, utilizando-se as doses de 5 e 10 kGy, para descontaminação dos produtos coletados no mercado varejista da cidade de São Paulo. A contagem bacteriana foi realizada pelo número mais provável (MPN), e as contagens fúngicas por diluição seriada em plaqueamento de superfície. Foi observada uma diminuição dos valores da umidade e da atividade de água (Aa) das amostras irradiadas de ovo integral em pó e clara em pó (p<0,05), mas sem alteração significativa do pH nas mesmas amostras irradiadas com 5 e 10 kGy (p>0,05). Em gema em pó, observou-se diferença significativa (p<0,05) nos valores de pH e Aa, mas não houve mudança expressiva nos valores de umidade nas amostras irradiadas com 5 e 10 kGy (p>0,05). A esterilização microbiana eficaz de todos os produtos ocorreu com a dose de 10 kGy.(AU)

ABSTRACT

Esta pesquisa visou analisar os aspectos relacionados à qualidade externa e interna dos ovos comercializados em quatro regiões no município de Manaus/AM, a partir de parâmetros perceptíveis pelo consumidor e por análises laboratoriais. Foram analisados 20 lotes, tendo sido adquiridos cinco da região Norte, quatro das regiões Sul e Leste e sete da região Centro-Oeste. Destes, 13 lotes foram produzidos no Estado do Amazonas, quatro no Rio Grande do Sul e três no Mato Grosso. A partir de cada lote foram analisados seis ovos, perfazendo um total de 120 ovos, do tipo branco e de classificação tipo grande. As análises consistiram em verificar o peso do ovo e avaliar a presença de sujidades (marcas de gaiola, penas, sangue e fezes), bem como de trincas ou contaminação por fungos para qualidade externa. Para determinar a qualidade interna foram verificados altura e pH do albume; altura, comprimento e pH da gema; peso, espessura e percentagem de casca. Observou-se alto grau de contaminação por fungos dos ovos provenientes do RS, enquanto ovos do AM tiveram as maiores porcentagens de marcas de gaiola, penas, trincas e fezes. Em relação à qualidade interna, não houve diferença entre ovos produzidos nos diferentes Estados de origem analisados, com exceção da cor da gema. Considerando regiões da cidade, a Zona Sul e Zona Norte foram as que obtiveram melhores e piores resultados, respectivamente. Os ovos de consumo comercializados no mercado local demonstraram altos índices de defeitos externos, assim como baixa qualidade interna. Tanto a região de produção, quanto de comercialização, foram fatores que influenciaram na qualidade de ovos comercializados no município de Manaus, AM.

ABSTRACT

This study evaluated the ability of Campylobacter jejuni to penetrate through the pores of the shells of commercial eggs and colonize the interior of these eggs, which may become a risk factor for human infection. Furthermore, this study assessed the survival and viability of the bacteria in commercial eggs. The eggs were placed in contact with wood shavings infected with C. jejuni to check the passage of the bacteria. In parallel, the bacteria were inoculated directly into the air chamber to assess the viability in the egg yolk. To determine whether the albumen and egg fertility interferes with the entry and survival of bacteria, we used varying concentrations of albumen and SPF and commercial eggs. C. jejuni was recovered in SPF eggs (fertile) after three hours in contact with contaminated wood shavings but not in infertile commercial eggs. The colonies isolated in the SPF eggs were identified by multiplex PCR and the similarity between strains verified by RAPD-PCR. The bacteria grew in different concentrations of albumen in commercial and SPF eggs. We did not find C. jejuni in commercial eggs inoculated directly into the air chamber, but the bacteria were viable during all periods tested in the wood shavings. This study shows that consumption of commercial eggs infected with C. jejuni does not represent a potential risk to human health.

ABSTRACT

OBJECTIVES: A salmonellosis outbreak occurred within a community of Gyeongju residents who ingested catered food from a wedding in June 2009. We aimed to epidemiologically investigate the probable vehicle of the infection. METHODS: We conducted a retrospective cohort study on 34 local residents who ingested the wedding food. RESULTS: Among the 34 residents, 31 (91.2%) reported symptoms of infection after eating the food. Among all of the wedding foods, pan-fried foods were highly associated with the diarrheal attack rate. On bacteriological examination, Salmonella species were detected in the pan-fried foods among the leftover foods and in 17 of the 31 stool specimens from the cases. There were five different types of pan-fried foods, but the onset of symptoms was independent of the ingredients used. We found that the pan-fried food was prepared at a food store in Seoul and that eggs were a common ingredient. CONCLUSIONS: The major cause of the salmonellosis in this population was presumed to be the pan-fried food prepared with contaminated eggs. These food items might have been partially undercooked because of their irregular shape, which allowed the Salmonella species to survive and multiply before ingestion.

ABSTRACT

Red meat, chicken meat and egg play a crucial role in supplying human dietary protein. Bacteria of enterobacteriaceae family, particularly Salmonella spp. Are one of the factors that endanger the health of protein food product. This study was undertaken aimed at determining the contamination level of these foodstuffs with Salmonella spp. and then evaluating their antibiotic resistance pattern. In this descriptive-cross sectional study, chicken, domestic eggs, and industrial eggs, each of them 100 samples, and 150 samples of red meats [beef and lamb] were collected through random sampling in Talesh city, and were assessed for contamination with Salmonella. For a definitive identification, biochemical assays as well as agglutination tests with related antisera were used. Data were analyzed using chi-square test. The significance level of differences was considered p<0.05. No bacteria were observed in the inner content of the domestic and industrial eggs. However 19 [19%] Salmonella isolates were obtained from the outer surface of industrial eggs shell, 4 [4%] from domestic eggs, 21 [21%] from industrial chicken, 5 [5%] from domestic chicken, and 5 [3.3%] from red meat. In terms of antibiotic resistance in isolated bacteria, the highest resistance was seen against erythromycin, nalidixic acid, and sulfamethoxazole, and the most susceptibility was for ciprofloxacin, cephalexin, and gentamicin. Based on the obtained results, attention to healthiness of foodstuffs is of particular importance for prevention of food-borne infections. Also, in order to prevent the appearance of resistant strains, indiscriminate use of antibiotics should be avoided in poultry and livestock industries

ABSTRACT

Salmonella enterica is frequently associated with outbreaks of human salmonellosis, and products of avian origin, such as eggs and chicken meat, are the main vehicles of its transmission. The present study describes the occurrence of different serovars of Salmonella enterica and phagotypes of S. enterica serovar Enteritidis in eggs destined for human consumption. Four thousand eggs obtained from commercial egg laying farms and one thousand discarded hatching eggs from broiler farms, which were acquired at farmers' markets and informal shops, were analyzed. Salmonella spp. was isolated from 52.0% of the discarded hatching eggs, in which the predominant serovar was Enteritidis (84.6%), and the predominant Salmonella Enteritidis phagotype (PT) was PT7 (26.9%). Salmonella spp. was not isolated from eggs obtained from commercial egg laying farms. The antimicrobial resistance profile showed that 23.1% (n = 6) of the SE strains were resistant to nalidixic acid. The results suggest that the consumption of discarded hatching eggs represents an important source of Salmonella transmission to humans.

ABSTRACT

Ovos são amplamente utilizados na culinária nacional, principalmente por seu baixo custo e elevado valor nutricional. Entretanto, muitos surtos de doenças veiculadas por alimentos têm como origem os ovos e seus derivados contaminados por micro-organismos patogênicos antes ou após sua postura pelas aves. Tendo em vista a importância dos ovos na alimentação humana o presente trabalho teve por objetivo realizar um estudo sobre os aspectos microbiológicos dos ovos de consumo abordando os principais micro-organismos envolvidos e sua importância para o ser humano. Foi observada uma grande variedade de micro-organismos sendo a Salmonella enteritidis a de maior relevância. Concluindo que apesar das barreiras naturais do ovo a contaminação pode ocorrer; portanto é importante garantir um manejo adequado deste produto a fim de evitar a sua contaminação e possível transmissão de doenças.

ABSTRACT

Chemical composition of eggs of the Olive Ridley Lepidochelys olivacea (Testudines: Cheloniidae) and it’s potential as a food source. The Olive Ridley is a worldwide distributed species with high nesting production per season, and in La Escobilla Oaxaca, México, there is a 70% of non-hatched eggs that are lost. In order to evaluate their potential use as a source for human and animal food products, their chemical composition was analyzed. Lyophilized egg samples from 25 turtles were obtained and were analyzed following the analytical methods for fatty acids, protein, fat, ash, moisture, amino acids, vitamins, cholesterol and microbiological agents. The analytical composition obtained was (g/100g): moisture (4.7), ash (3.8), protein (53.7), and fat (47.4). The essential amino acid (g aa/100g protein) content was: Ile (4.4), Lys (6.6), Leu (7.4), Met+Cys (8.8), Phe+Tyr (10.8). The vitamin content was: retinol (340μg/100g), cholecalciferol (5.9μg/100g) and 8.6mg/100 tocopherol, 0.3mg/100g thiamine and 1.1mg/100g riboflavin. The total lipid content (TL), fatty acids (FA), and cholesterol (Chol) were divided into three groups based on the weight of the turtle: (TL) (44.3-48.7-49.1g/100g) and (Chol) (518.4-522.5mg/100g-728.7). A total of 17 Saturated FA (SFA), 8 Monounsaturated FA (MUFA) and 11 Polyunsaturated FA (PUFA) were identified. The most abundant SFA (mg/100g) were: C14:0 (445-772), C16:0 (485-1263); MUFA: C16:1 (456-716), C18:1n-9c (904-1754), and PUFA: C20:4n-6 (105-217); two n-3 fatty acids were identified EPA (48-103) and DHA (97-189). There were significant differences (Fisher, p<0.05) for: (Chol), total FA, SFA, MUFA, PUFAs and n-3 (EPA + DHA) FA. It was not detected any microbiological agent. In conclusion, lyophilized L. olivacea eggs are an option for its inclusion in the development of food products as they can be used as a high quality biological protein and n-3 fatty acid source for fortification and enrichment. Por su potencial como fuente alimenticia, se analizó la composición química de huevo de Lepidochelys olivácea en La Escobilla, Oaxaca, México. El Instituto de Ciencias del Mar y Limnología de la Universidad Nacional Autónoma de México proporcionó 250 muestras de huevo liofilizado de 25 tortugas, que se analizaron siguiendo métodos oficiales para humedad, cenizas, proteína, grasa, lípidos totales(LT) y análisis microbiológicos; además de ácidos grasos(AG) por cromatografía de gases, aminoácidos(AA), vitaminas y colesterol(col) por HPLC. Los resultados fueron los siguientes: (g/100g) humedad(4.7), cenizas(3.8), proteína(53.7) y grasa(47.4). AA esenciales (g aa/100g Proteína): Ile (4.4), Lys(6.6), Leu(7.4), Met+Cys (8.8), Phe+Tyr (10.8); retinol (340μg/100g), colecalciferol (5.9 μg/100g), tocoferol (8.6), tiamina (0.3) y riboflavina (1.1) (mg/100g). Y los de (LT), (AG) y (Col) se concentraron en tres grupos por peso de tortuga: (LT) (44.3-48.7-49.1g/100g), (Col) (518.4-522.5-728.7 mg/100g). Entonces se identificaron 17 AGSaturados, 8 AGMonoinsaturados y 11 AGPoliinsaturados. Los AGS más abundantes (mg/100g): C16:0 (485-1263), AGM: C16:1 (456-716), C18:1n-9c (904- 1754) y AGP: C20:4n-6 (105-217), EPA (48-103) y HA (97-189). También, existió diferencia significativa (Fisher, p<0.05) para (Col), AG totales, AGS, AGM, AGP y AG n-3 (EPA+DHA). No se detectó presencia de agentes microbiológicos. El huevo liofilizado de L. olivacea es una opción para el desarrollo de productos alimenticios por su proteína de alto valor biológico y ácidos grasos n-3.

ABSTRACT

The serotypes of 178 isolates of Salmonella enterica taken from food in different regions of Cuba between January 2008 and December 2009 were identified, and the antimicrobial susceptibility pattern of 100 selected isolates was determined by stratasampling. A total of 20 Salmonella serotypes were identified, with a predominance of S. Enteritidis (23%), S. Agona (13.5%), and S. London (11.2%). Of all the strains, 75%were resistant or presented intermediate resistance to at least one of the drugs tested, in the following order: tetracycline (70.7%), ampicillin (22.7%), and nalidixic acid (14.7%). Ten different resistance patterns were identified. The most frequent patternscorresponded to strains that were either drug-resistant or had intermediate resistance (89.3%). Three strains (identified as S. Infantis, S. Derby, and S. Enteritidis) were multiresistant, and one of them, S. Enteritidis, was not sensitive to either nalidixic acid or ciprofloxacin. To control salmonellosis, the importance of maximizing integrated health surveillance is emphasized.


Se describen los serotipos de 178 cepas de Salmonella enterica aisladas de alimentos en diferentes regiones de Cuba entre enero de 2008 y diciembre de 2009, y el patrón de susceptibilidada los antimicrobianos de 100 aislados seleccionados mediante muestreo por estratos. Se identificaron 20 serovariedades de Salmonella entre las que predominaron S. Enteritidis (23%);S. Agona (13,5%) y S. London (11,2%). Del total, 75% de las cepas fueron resistentes o presentaronresistencia intermedia a al menos uno de los fármacos probados, en el siguiente orden, según su frecuencia: tetraciclina (70,7%); ampicilina (22,7%) y ácido nalidíxico (14,7%). Seidentificaron 10 patrones de resistencia diferentes y predominaron las cepas resistentes o con resistencia intermedia a un fármaco (89,3%). Tres cepas (S. Infantis, S. Derby y S. Enteritidis)fueron multirresistentes y una, de S. Enteritidis, dio un resultado no sensible al ácido nalidíxico y la ciprofloxacina. Se destaca la necesidad de extremar la vigilancia sanitaria integrada en el país para el control de la salmonelosis.
